2018: The new Guyot Poussard pruning

You're on the first row, Tonio... You did a good job on Friday. The new Guyot Poussard pruning... which emphasises the bilateral flow of sap in the vine, this is why we create two opposing spurs... these will draw the sap to both sides of the vine. emphasiing the bilateral flow of sap in the vine. Finally, the cane, which will produce this year's fruit. The spurs serve for next year, so on top we leave two spurs... which grow the way we want... . to form a 'Y' shape, in the vine.. this 'Y' shape will ensure... the vigour of these two flows of sap. We used to prune simple Guyot style, so we'd just have the spur from the year before... and creating a spur, with a fruiting cane, separated as much as possible. We just add a spur... to form the vine in a 'Y' shape... which better utilises the sap passageways... This avoids having part of the vine fail. We work the two sides of the vine. That's why we have one on the left, one on the right, and a fruiting cane. It prevents the vines failing on one side, and having the sap stop flowing. In fact it's for preventing 'Esca'. When we pruned simple Guyot style before, we made a lot of pruning cuts, which blocks sap flow. In working the two sap flows, we can reinvigorate the vine. You should have done the talking, you'd have the healthier vines...
