Marco, The italian cook of the Bist’Roch

Hello, I'm Marco, I am an Italian cook. I'm the new cook here at Bist'Roch. I'm Italian, from Campobasso, a small village in the region of Molise. Here we do a simple cuisine... with local produce which we buy daily at the market. Each day we change the menu. I go to the markets at Beaune and Nuits-Saint-Georges.... nearly every day. Today we have a tomato salad, as a vegetable, made from our tomatos grown on the Domaine Prieuré Roch farm. Another starter, will be a soup, made from chickpeas, and saffron. It's an Italian recipe that comes from a Northern region in the centre of Italy. Rather the Umbria region... a region in the centre of Italy. For the main dish... we have pork chops, red onion deglazed with red wine, Italian 'Treviso' style. My cuisine is a popular style, an everyday cuisine... using ingredients that are simple yet rich in flavour. We are open for both lunch and dinner 5 days a week. Lunch is from noon to 2.30pm., and dinner 7pm to 10pm. The lunch and dinner menus are different. This evening we are serving carpaccio de Cecina, with... it's very finely sliced beef charcuterie. For the main dish it will be pasta... with chicken and vegetebles, our own farm chicken of course... This is what we use for our platters of charcuterie, which is available every day at Bist'Roch. Also we have cheese. Cheese from Burgundy, and Italian cheese, such as parmesan and pecorino. This is mascarpone cream, and for the dessert, a classic tiramisu.. Bist'Roch welcomes you every day from 11am to 10pm. It's a place where you can come to taste, and experience the wines of Domaine Prieuré Roch.
